More tried and tasted war time recipes





Tomato Cheese Savoury
4 tomatoes sliced
1lb mashed potatoes
3oz grated cheese

place tomatoes on a bed of mashed potato. sprinkle with cheese, salt and pepper, put under the grill until cheese is melted and browned.

This is listed as a breakfast dish, but although I don't think I could face it first thing in the morning it was really tasty for lunch the other day.


Milk jelly whip
packet of jelly
1/4 pint evaporated milk

Dissolve jelly following directions on packet, but only make up to 3/4 pint instead of 1 pint. Leave to cool and when just beginning set stir in evaporated milk, whisk until light and frothy. put back in fridge to set.

When I saw this recipe in the book it reminded me that my mum used to make this for me and my brothers when we were kids, so I had to try it out on my two. It was a big hit with both of them- and Andy and I managed to force some down too . (ha! ha!) It got me thinking back to other puddings mum used to make for us, so after chatting to her about it on the phone this afternoon, I whipped up some "apple snow"- whisk up some evaporated milk until it thickens then fold in apple puree, pop in the fridge to cool. Yummy!!! Handy for using up the evaporated milk and cooked apple that were in the fridge today, and it brought back cosy childhood memories. Andy and I started reminicising about all those great TV programmes we used to watch.....bagpuss, trumpton, mr benn, the flumps........ Andy had a deprived childhood though- his mum never made apple snow for him!!!
